Roasting Pumpkins Seeds

My daughter and youngest son carved their pumpkin last night! It turned out very good. My daughter did the carving and my 8 year old had a blast cleaning out the “guts” of the pumpkin!
I have roasted pumpkin seeds before and didn’t care for them. I recently found this recipe on the Taste of Home site and wanted to give it another try.
The process is pretty easy. But, alas… I still do not like them. I don’t like the hulls. They don’t chew up well!
I did a little bit of research on hulling pumpkin seeds. It seems that they are healthier if you eat the hulls and the seeds. But you can hull them:
To hull the seeds, break them up with a rolling pin, then drop the seeds into a large bowl filled with water. Stir vigorously. The kernels will sink to the bottom and the shells will float. Then roast the seeds to your liking.
I don’t know if I will try that or not next year. We’ll see. Seems to me that if you are smashing them with a rolling pin that you would be smashing the seed inside too? Maybe roasting them first would make the hull brittle and easier to crack with light pressure.
