Lemon Bread – Quickest Quick Bread

I love to cook. Experimenting with ingredients, spices and techniques. Baking on the other hand is more complicated and you need to be precise. So I tend to seek out easy baking recipes that are hard to mess up.
When one of my dear friends gave me this super simple Lemon Bread recipe, I knew it was just my baking cup of tea! It is so good that you would never guess how easy it is to make!
Lemon Bread
1 Box Lemon Cake Mix
1 Small package instant Lemon pudding mix (can use sugar free)
1 Cup water
1/2 Cup oil
4 eggs
Mix all of the ingredients together with a mixer for 2-3 minutes.
Pour into 2 greased loaf pans and bake at 350 degrees for 40-45 minutes.
That’s it! You can add 1-2 teaspoons of Poppy seeds if you like. I made a glaze out of powder sugar and a few drops of milk to pour over the cooled loaves.
I am thinking that you could change this recipe up and make other flavors as well. What about a chocolate quick bread? Anyone?

mmm…that looks tasty. I have been wanting lemon this week and that looks good and easy enough to be on my weekend make it list. Remember those lemon cooler cookies they used to make? I want some of those so bad and they quit making them (ofcourse) but this could cure the pregnant craving!
